Protein Pancakes: Flour-Free and Sugar-Free!

I’m so excited to share with you another of our family favorite recipes. Totally delicious, and totally nutritious! I occasionally make a double or triple batch to store for the week, and to reheat you simply warm them on a skillet for 30 seconds per side, or microwave (but reheating in a skillet turns out way yummier;).

Ingredients

  • 1.5 cups dry Oats
  • 1 cup Skim Milk
  • 1 cup Low-fat Cottage Cheese
  • 2 TBSP Chia Seeds
  • 3 Whole Large Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1 tsp Baking Powder

Directions

  1. Blend to a batter consistency using your Nutri Bullet, Vitamix, Ninja or blender.
  2. Coat pan in coconut oil (recommended), and cook like regular pancakes.
  3. Top with raw honey and favorite fruit, and enjoy!IMG_5982
