Easy Slow Cooker: Hearty Bean and Beef Soup

Looking for an easy dinner? Here’s a super simple and healthy option! The beauty of slow cooking: you can set it and forget it! Or, well, be sure to set the timer on the slow cooker…and then forget it! For the rest of the day! A bonus about this recipe is that it freezes well, and can be made in bulk and stored for another day (or month!). So let’s get to it!


  • 1 large onion, chopped
  • 8 cups water
  • 4 garlic cloves, diced
  • 3 medium carrots, chopped
  • 3 ribs celery, chopped
  • 4 cups kale, chopped
  • 1/2 cup mushrooms, chopped
  • 2 cups diced tomatoes
  • 1 and 1/3 cups mixed beans
  • 3/4 cup pearled barley
  • 1 lb cut stew meat**
  • 2 and 1/2 tsp Italian seasoning
  • 2 tsp sea salt

**Can also be made with no meat


1. Add 8 cups of water, along with all ingredients,to slow cooker.

2. Cover and cook on high until beans and beef are tender, and soup is thick, about 8 hours.

3. Serve and enjoy!!
