Chicken, Broccoli and Cauliflower Casserole

Here’s another dinner idea for you, mamas! This one’s packed with cruciferous goodness, which helps with ridding the body of excess estrogen, a common hormonal issue that affects health and weight loss. Much to my delight, my kids absolutely loved this dinner. In fact, my middle daughter exclaimed it tasted better than pizza. Whaaat? I had to ask her to repeat that, to make sure I didn’t hear it wrong. My husband loved it, too, so it’s an all-around hit. Try it out for your family!

  • 2 lbs chicken breast, already cooked and shredded
  • 1 head cauliflower, chopped
  • 1 head broccoli, chopped
  • 1 onion, chopped
  • 4 TBSP butter
  • 2/3 cup plain Greek yogurt
  • 1/2 lb low fat mozzarella
  • 1 tsp each: sea salt, garlic powder, and chili powder

1. Preheat oven to 375.
2. Place butter on bottom of large casserole dish, followed by onions, broccoli and cauliflower. A large glass dish is preferable, but since ours wasn’t big enough, I used a regular baking pan instead.
3. Bake for 20 minutes.
4. Remove casserole dish from oven and add yogurt, chicken, cheese and spices; mix gently.
5. Cover and bake for about 15 more minutes.
6. Cool slightly. Enjoy!!
*Tip: cook chicken ahead of time to save on overall cook time.
